According to our teacher, Chief Jessie, the main goal of the first class is for her to understand the skill level of each student. Each of the ten students there that night gave an introduction, including a skill level and why they were there. After slicing a carrot to show Chief Jessie our knife skills, we paired into teams of two to make a dish each. My team made Chicken Wing Appetizers. At the end of the night, we all sat down to enjoy everyone’s dishes.

Last week, I attended the Sushi 101 class I had signed up for in December. The first thing I learned is that sushi is all about the rice. This makes it surprisingly vertical and allergy friendly. It does not have to contain any fish in it at all. If you are after raw fish, you are interested in Sashimi. Sushi can have fruit, vegetables, fish, chocolate, or meat in it. It is the rice that makes it sushi. Presentation, however, is important. In class, I learned seven different ways to make sushi, complete with presentation tips. Since the rice is the most important piece, I have included a recipe for sushi rice at the end.

 Alissa is in search for a dairy free birthday cake for her Sam, her milk allergic son, as he will be turning 1 soon. She would also like the frosting to not use soy margarine based.  My first thought was a crazy cake with SuzanV’s Vegan German Chocolate Frosting. When I make it, I modify it slightly by using almond milk.

Want a breakfast food that appeals to a broad section of people, while still meeting the needs of those with allergies? This is not as easy as it sounds. Most fancy breakfast dishes have egg as a star ingredient. Potato dishes are often cooked in butter and covered in cheese. Meats, a great source of much needed protein, are often missed in with these dishes. Bread may be an option, but most likely not if you can’t have gluten. That is assuming that the bread is allergy free, and not covered with butter. It leaves one wondering, what’s a girl to do? The answer is simpler than you would think, make a potato and sausage breakfast dish.

Thanksgiving Dinner

Thanksgiving dinner is all about family, giving thanks, and food. It is a date where people with different food needs or preferences can either fill left out, or, if you do it right, part of the family. There are so many dishes you can serve; it is easy to include something for everyone, with a little forethought. The main ingredients, turkey, potatoes, and gravy, can be adapted to meet the needs of the group.

Truffle Party
